Chia and Flax Seed Pudding

Fiber is usually not prioritized in diets but this chia seed pudding is the base for endless versatility and will provide you with ample fiber and omega3 fats. I prefer to put sweetener on this pudding after it sets, but you can mix in honey or maple syrup before putting it in the fridge. Top it with my crispy quinoa granola, berries, coconut, or dried fruits, to make a breakfast that will keep you full and satisfied for hours.

 

Instructions

  1. Combine all of the ingredients in a bowl and stir well to ensure the seeds are evenly distributed. Let the mixture sit for at least 30 minutes, or overnight until all the liquid is absorbed.

  2. Check on the mxiture after 30 minutes and give another stir to ensure that the seeds have not sunken to the bottom of the bowl.

  3. Eat with toppings of choice or stir in yogurt for some added protein.

Ingredients

¼ cup chia seeds
2 tablespoons flax seeds
¾ cup oat milk
¾ cup water
¼ teaspoon salt
½ teaspoon vanilla extract
