Minty Sweet Pea Hummus

This recipe was inspired by a trip to Loaves & Fishes in East Hampton where I found this variety in the fridge and immediately fell in love. It is a perfect alternative to hummus and is a superb addition to any crudités platter. It comes together in a matter of minutes with the use of frozen peas, but if fresh ones are in season those would work wonderfully. The potency of mint will vary depending on the season so I would start with ¼ cup and gradually add in the remaining half a cup to reach your perfect balance.

Instructions

  1. Place all the ingredients in a food processor and blend until smooth.

  2. I like a more textured dip so blend it so that some chunks remain. Garnish with chopped mint if desired.

Ingredients

10 oz frozen peas - thawed
2 tablespoons tahini
2 teaspoons lemon zest
2 teaspoons lemon juice
2 tablespoons water
1 small clove garlic
1 teaspoon salt
a few grinds of pepper
½ cup mint leaves
